What I'm cooking
I love love love cooking and being in the kitchen buuuut I have kids and schedules and soccer practice. My absolute favourite thing to do on a Sunday is prep food for the week. I feel like such a hero when I walk in the kitchen on Monday morning and see a fridge full of ready to go food. And lets be honest; when I don't plan my lunches I end up eating a hunk of cheese and some canned peaches at 3 o'clock. My go-to's are:
chicken breast
a hearty salad
hard boiled eggs
protein balls (recipe here)
healthyish muffins (recipe below)
It takes some time and a bit of effort, but your future self will thank you when it's go time and you can reach into the fridge, easy peasy.

Healthyish Muffins
1 1/2 C Brown Sugar or Maple Syrup
1 1/3 C Avocado Oil
4 Eggs
2 tsp Vanilla
8 Medium Carrots or Zucchini (squeeze dry)
Add above ingredients to a mixing bowl and whisk to combine. then add:
1 tsp Salt
1 Tbsp Cinnamon
2 1/2 C Flour
2 tsp Baking Soda
Scoop into a lined muffin pan and sprinkle oat topping, if using. Bake at 375 for 18-20 minutes.
Optional Oat topping:
6 Tbsp melted butter
1 tsp cinnamon
1/4 C brown sugar
1/4 C white sugar
1/2 C flour
1/2 C large flake oats
What I'm doing
Cooking, cleaning, laundry, dishes, taxi driving, homework, remembering all the things. #momlife right?! I love love love it but its so easy to get overwhelmed, not feel appreciated and hate everything. I've been focusing hard on my mindset and attitude. I'm thankful for food to cook, clothes to wash and a car to drive. This little book has been super rad in helping me start my day with the right mindset. I write down what I'm thankful for and what could make my day awesome. And when I make the time to journal, my day is usually awesome ;)

What im rolling
I've been denying it long enough but we all know winter is coming. And with winter often comes sickness. And ain't nobody got time for that! We're being proactive in our house with lots of supplements, real food, good sleep and essential oils. We keep our diffuser going and use our Flu Bomb roller ALL DAY! Rollers are my favourite because they are diluted and ready to go whenever you need them. I keep rollers all over the house and roll it on me and my kids when I see it. Just roll along your spine or the bottoms of your feet. Recipe below.
